Gregory Belt is the Founder & CEO of EverGrain, which upcycles barley leftover from the beer-brewing
process for a performance-forward protein ingredient that’s as good for you as it is for the planet. Prior to his
current role, Greg led AB InBev’s global sustainability program and the creation of their 2025 sustainability
goals. Greg has over 20 years of experience in innovation and supply chain across large corporations and start-ups. Greg graduated from Allegheny College with a Bachelor’s Degree in Economics and has a Master’s Degree in Business Administration from Washington University in St. Louis. Greg currently resides in St. Louis with his wife Katherine and three children, Henry, Owen and Caroline.

Upcycling offers a second chance for food that would otherwise fall through the cracks of our fragmented food system. Waste can be driven by not using food products in their entirety. However, value-added processing rethinks the concept of “waste” by turning surplus and byproducts into food products, thus finding greater value in items or parts usually deemed worthless. Given the explosive growth of this industry in such a short timeframe, how can facilities, operations, and menus be redesigned to use as much of each product as possible? Explore the growing momentum around upcycled food and the untapped potential of this fledgling market.
